Hard Baked Eggs - Recipe

Baking your eggs instead of boiling makes your eggs much easier to peel. This is especially helpful if you are using fresh eggs from the coop. Chicken owners may wait two weeks before boiling fresh eggs since they will peel much easier when the membrane holding the white to the shell has broken down some. (this is still fresh when you consider eggs you buy in the store are 30 to 60 days old)

Another advantage is the yolks do not get that grey ring around them like they do sometimes when you boil them.

 

Bake in a preheated oven at 325 on the center rack for 25 minutes; 30 minutes for duck eggs. Use a muffin tin to prevent eggs from rolling around. I find I can use a mini muffin tin and bake more eggs at one time.

Let cool before peeling. You can speed up that process by putting them in ice cold water.
