Preserved Lemons ~ recipe

Now this is one I have done before. It sounds strange if you have never had preserved lemons (lemon pickles) - I had not. But, once you taste them you'll see how great they are. I had purchased a jar of them - high priced - at a gourmet store. Then, I decided to make my own. I still have not opened that jar of them that I bought!

So, if you have never tried these, give yourself a treat and make some. Use them in many ways - soups, vinaigrettes, salads, appetizers, meats. It is really the peel that you are pickling, but it is all good!
